Go Vegan or Go home

We are a meat eating family.  Carnivores are we.  Bill, born and raised a farm boy, drank milk straight from a cow and was raised on cheeseburgers 3” thick.  I married into it.  I was raised on…well…we wont go there, but I do think it is important for you to know I have eaten bear, turtle, eel pout, and a couple other things no one should ever eat.

One thing I have never eaten (the list is actually long) is tofu.  I have mentioned this in passing a couple times.  I went as far as buying it once and throwing it away for lack of a purpose.  I caved tonight.  Yep, yesterday, I bought my very second tofu. Tonight, I actually opened it.

And I was sneaky – didn’t tell any other Pieper.  I whipped it into this lovely chocolate mousse.  (I doubled the recipe to make 6 servings.)

20110413_164606_8126I just wanted to share that this was my pure maple syrup.  Mrs. Buttersworth is pure, I think.

It was a HUGE hit to put it mildly.  We all loved it.  I do think I will try this recipe next time to see if it is a little less dense of a chocolate.

Then I went all Betty Crocker and made homemade pizza – from scratch!!

And it was good!!  (Yep, that is spinach on mine!)

My kids said this was the best meal ever.  Ok then, putting it on the “making it over and over” list.

    LOVE it Deb! You can also put it in a shake! It’s basically like quinoa and absorbs whatever flavors are around it.

      Oh, and Missi, I ate that whole thing and didn’t feel grease pouring out my pores and didn’t feel the brick in my stomach. AHHHHHHHHHH….

      Have you tried tofu? I am completely shocked…what changed my mind was a cheesecake a co-worker brought in and it was delish, and tofu! I started with a tiny fork tasting it because I had to, and ended with an entire piece. YUM!
