Diamonds are NOT this girl’s best friend

I have awesome friends.  I am surrounded by friends both within my family and in other areas of my life.  I am very blessed to have awesome people all around me, wherever I go, making life a fun journey.  And, I have two friends that go WAY back to my childhood.  Yep, Angie and Amy.  They are the kind of friend that knows me even if we don’t see each other more than once a year.  We just have that kind of thing goin’.

This past spring when we got together to shop visit and catch up, Angie taught us how to make Black Bean and Corn Salsa.  Others have called it Texas Caviar, but when I bing Texas Caviar, the recipes include black eyed peas, which is only a band in my mind, not an ingredient.  I’ve got a feelin’.  Just sayin’. 

Anyway, for this, you need:

  • 3 – 5 Tomatoes
  • Red onion
  • Cilantro
  • 2 Limes (for juicing)
  • 2 or 3 cloves of garlic
  • 1 can whole kernel corn
  • 1 can black beans
  • Cumin
  • Red Wine Vinegar
  • Sea Salt

Step 1:  Dice tomatoes

Step 2: Dice red onion (I love my Pampered Chef chopper!) and add to bowl.

Step 3: Strip and chop up your cilantro.  My least favorite task in the series.

Step 4: Mince your garlic.  Again, Pampered Chef to the rescue.

Step 5:  Juice your limes.  Hint, microwave them first for 20 seconds to make it easier.  Dump in bowl.

(sorry, no pictures of my juicing – my hands were too sticky.)

Step 6:  Drain both the black beans (rinse) and the corn – dump in.

Step 7: Add pinch of cumin, dash of red wine vinegar, and sea salt

Step 8:  STIR AND ENJOY – Scoops work great for this, but any chip will do.
