More Muffin Mania

So today I was sidetracked by a new muffin recipe.  I just had to make it, which lead to two more varieties as well.  And then I got to thinking about how one blog I have read, and I don’t remember which one, talked about learning how to take good pictures of food.  I guess I am supposed to make sure I use natural lighting, beautiful backgrounds, fun serving dishes…etc.  So I also played with my muffins.  I like my kind of pictures better.  Slap a muffin on the counter, take a picture.  Done.

Muffin #1 was Lemon Poppy seed:

1 lemon cake mix

1 (3 oz.) box lemon instant pudding mix

1 C. warm water

1/2 cup oil

4 eggs

1/4 cup poppy seeds  (I skipped them this time, don’t want my kids to fail drug testing.)

Mix all ingredients together and pour into greased muffins tins.  Bake at 350 for 20 minutes.

Then mix 2 tablespoons butter with 1 cup powered sugar and 1 tablespoon lemon juice to make a glaze – amounts can be altered to make a better consistency.    Spread over warm muffins and allow to cool.

Apple Cinnamon Muffins

Preheat oven to 375.  Spray 18 muffin tins.  (I only made 12 with this recipe.)

Peel and dice 2 braeburn apples. 

Stir together:

1 1/2 cups flour

2/3 cup sugar

1/2 tsp. salt

2 tsp. baking powder

1 tsp cinnamon

Combine:

1/3 cup vegetable oil

1/3 cup milk

2 eggs

dash of hot water

Mix into dry mix.  Fold in apples.  Divide into muffin tins.

Topping:

1/2 cup sugar

1/3 cup flour

1/2 cup butter

1/4 cup oatmeal

1 1/2 tsp. cinnamon

Cut butter into dry ingredients.  Sprinkle over unbaked muffins.

Bake 16 – 18 minutes until toothpick comes out clean.
